The restaurant

David Henesy started his restaurant career in NYC in 1977 on the Upper East Side of NYC as a partner-operator of Punch, Petaluma, Island and Saranac Restaurants. Later he occupied an executive position with the Milan Italy based Bice Group with restaurants in NYC, Chicago, Milan, Paris, Beverly Hills and Tokyo.

In 1993 he switched gears completely and opened La Vitrola a ground breaking restaurant in Cartagena de Indias, Colombia where he met his wife and partner Carolina Rodriguez. Together they built La Posta in 2005 and Market in 2007. La Vitrola continues to hit the ball out of the park, over twenty years later, as do Market and La Posta.

As the first restaurant operators in Panama to have a mission statement that included a focus on sustainability, they continued to grow their base by focusing on service and quality ingredients. Today we are deeply involved in the development of organic vegetables and herd of grass fed, no hormones or antibiotics certified Angus cows in Volcan, Chiriqui.

HRG owns an importing company that handles everything from stone ground organic grain flours from Central Milling in Utah to the finest organic chocolate from San Francisco and Sicilian olives and oils. We continue to break new ground by dry aging prime beef imported from the USA by air (fresh…never frozen) in our own humidity controlled lockers.
